|1 1/2 cups buttermilk baking mix||1 teaspoon vanilla|
|1/2 cup sugar||1 egg|
|1/2 cup milk or water||3/4 cup apricot preserves|
|2 tablespoons shortening||1 tablespoon lemon juice|
|Whipped Cream Cheese Topping (below)||2 kiwifruit, sliced|
1/2 pint strawberries, cut into halves
Heat oven to 350°. Grease and flour round pan, 9 x 1 1/2 inches. Beat baking mix, sugar, milk, shortening, vanilla and egg on low speed, scraping the bowl constantly, 30 seconds. Beat on medium speed, scraping bowl occasionally, 4 minutes. Pour into pan. Bake until wooden pick inserted in center comes out clean, 30 to 35 minutes. Immediately remove from pan; cool.
Heat apricot preserves and lemon juice to boiling, stirring occasionally. Strain enough of the preserve mixture to measure 2 tablespoons syrup for glaze; reserve. Cool preserve mixture.
Split cake horizontally to make 2 layers. (To split, mark side of cake with wooden picks and cut with long, thin knife.) Spread bottom cake layer with half of the preserve mixture; spread with 3/4 cup of the Whipped Cream Cheese Topping. Top with second layer; spread with remaining preserve mixture. Arrange fruit on top. Brush fruit with reserved apricot syrup. Almost side of cake with remaining topping. Serve immediately or refrigerate no longer than 8 hours. 8 servings; 425 calories per serving.

Whipped Cream Cheese ToppingWhipped Cream Cheese Topping: Beat 1 package (3 ounces) cream cheese, softened, in chilled 1 1/2-quart bowl until smooth. Add 1/4 cup powdered sugar, 3/4 cup chilled whipping cream and 1/2 teaspoon vanilla. Beat on high speed, scraping bowl occasionally, until stiff peaks form.
Apricot Rum Cake: Omit kiwifruit, strawberries and glaze. Before spreading top of cake with remaining preserve mixture, prick cake with skewer or fork. Heat 1 tablespoon sugar, 2 tablespoons water and 1 tablespoon rum or brandy to boiling. Spoon evenly over top of cake. Continue as directed.
